What does it take to make a Neapolitan Style Pizza?

A good dough that has rested for 24-48 hours, bringing out the natural flavor of the yeast.
Fresh quality ingredients that complement the dough, local when possible. All of our pizzas include garlic infused olive oil, mozzarella, and freshly chopped herbs.
A very hot, 600° wood fired oven (the oven reaches 900° later in the evening). A good Neapolitan pizza is fired hot and quick, our pizza takes between 90 and 120 seconds to fire! (Later in the evening, pizzas can take as little as 60 seconds to fire!)
Each pop-up we will have an offering of a few freshly prepared sweets.
Our pizzas will feed two. If you are really hungry, order a second. Perfect with a green salad and your favorite beverage.

Who we are

A Pop-up Wood Fired Caterer in our Neighborhood.

This all came about one weekend when people were asking if I sold pizza. The name is from the red Vespa I own and which we use to deliver pizzas (pre-Covid).

We Support Non-profits

We occasionally host a benefit event, with 100% of sales donated to a non-profit in the name of Vespa Guy Wood Fired Pizza and the families of Pinewood Manor. Our customers have always been very generous!

Fund raisers

On an annual basis we donate a Pizza party to a non-profit which is sold off during their annual live Auction Event, it's fun to watch folks bid for the party and more fun to see them enjoy it, all for a good cause.
